December 1995, William Penn Life, Page 3 Sales representative, employee earn professional designations PITTSBURGH — The Associa­tion congratulates Sales Repre­sentative Noreen Fritz, F1C, and Home Office employee Debra S. Evans on recently earning the professional designations of, re­spectively, Life Underwriters Training Council (LUTC) and Fraternal Insurance Counsellor (FIC). Ms. Fritz has been serving Wil­liam Penn members since 1988. She earned her LUTC designa­tion in July from the Pittsburgh Life Underwriters after complet­ing a two-year course of studies in personal and business life insurance. "I took the (LUTC) course to be able to better assist our mem­bers and their families, particular­ly in regards to death and the oftentimes overlooked needs that occur at death, such as paying taxes,” Ms. Fritz said. Although licensed to sell insur­ance in both Pennsylvania and West Virginia, she primarily serves the Western Pennsylvania area. She earned her FIC designa­tion in December 1992. Ms. Evans earned her FIC designation from the National Fraternal Congress of America in September, following one-and-a­­half years of study. She has been employed by the Association for nearly nine years. Among her many duties, she maintains and services members’ annuity plans, processes cash sur­renders and ensures that mem­bers’ IRA’s and qualifying plans comply with ever-changing IRS regulations. She also uses her artistic talents to create inform­ational and decorative signs for many of the Association’s frater­nal events. She is presently enrolled as a part-time student in the accel­erated degree program at Seton Hill College in Greensburg, Pa. Both Ms. Fritz and Ms. Evans said they were grateful for all the support and assistance given them throughout their studies by the Home Office. We congratulate Noreen Fritz, FIC, LUTC, and Debra S. Evans, FIC, on earning their respective designations. We thank them and all our representatives and em­ployees who have devoted much time and effort toward the fur­ther study of insurance, enabling them to better serve our mem­bers and our Association. I hope you've all been good boys and girls this year, or Santa Vilmos won’t bring you any szaloncukor or mézes kalács. Only kidding! It says right here in Santa Vilmos’ little green ledger that you’ve all been extra good this year, so you’ll all get plenty of candy and cookies (and maybe a little something extra from the Tokaj region) in your Christmas stockings. All except for one little girl who made a disparaging remark about Chef Vilmos’ pale complexion. Hey, you’d look like Casper the Ghost, too, if you spent as much time in the kitchen as I do, especially during the holiday season. Ah, yes, cooking for the holidays. It seems like you spend every waking moment in the kitchen at this time of year. If you entertain as I do, you even sleep in the kitchen so you can get right to work as soon as you wake up. But, isn’t all the extra effort worth it? Family, friends, neighbors all together smiling, laughing, full of good cheer. I say, the more guests, the better—and the more likely you’ll have help cleaning up. Anyway, this holiday season, treat your guests to a taste of traditional Hungarian cuisine. These dishes are staples in every Hungarian household, good any time of year. They’ll definitely add a Magyar touch to your holiday celebration. The recipes are taken from my favorite book, "An Outstanding Collection of Treasured Hungarian Recipes and Family Favorites” (catchy title, huh?), available for a $5 donation to the William Penn’s scholarship foundation. (See ordering information below.) Oh, one more thing: about the sour cream? HEY! IT'S THE HOLIDAYS! Enjoy; indulge. Work off the extra pounds in January. But, if you must, you can use an appropriate substitute or delete it. You make the call. Veal Paprikas with Mushrooms (Borjú paprikás gombával) 1V2 lbs. veal diced 1 tblsp. shortening V2 tsp. paprika Vi tsp. black pepper 1 medium onion, chopped 1 tsp. salt 1 tblsp. parsley V2 pt. sour cream V2 lb. mushrooms 1 tblsp. flour In a large skillet, melt shortening, add onion, paprika, pepper, salt, parsley. Add meat diced into small pieces. Cover and cook for one hour. Add mushrooms and cook until tender. Add the flour, blend well and cook for 5 minutes. Add sour cream. Serve with rice or mashed potatoes. Cucumber Salad (Tejfeles uborka-saláta) 2 large cucumbers 2 tblsp. vinegar 'A tsp. black pepper 'A tsp. paprika 1 clove garlic, chopped 1 small onion, minced 1 tblsp. salt 1 cup sour cream Peel and slice cucumbers in thin round slices into a bowl. Sprinkle with salt and let stand for about 30 minutes. Squeeze out excess moisture. Place in a serving bowl and add seasoning, vinegar and sour cream. Mix well and serve. Poppy Seed Horse Shoes (Mákos patkó) 4 cups flour 6 tblsp. sour cream V2 lb. sweet butter 2 tblsp. sugar 12 egg yolks V2 tsp. salt 1 cake fresh yeast dissolved 1 cup milk in 'A cup of warm milk 1 whole egg Sift flour and salt in bowl, cut in butter as you would for pie crust. Add egg yolks, sugar, yeast mixture and sour cream. Add milk gradually, work together well. Cover and put in warm place to rise. Roll out on lightly floured board. Cut into squares, fill with poppy seed filling, roll, shape into horse shoes. Brush tops with beaten egg. Bake in 350 degree oven for 20 to 25 minutes.
