Miskolc BUTCHERS IN MISKOLC IN THE LIGHT OF THE 18TH-19TH CENTURY ARENDA CONTRACTS AMONG THE GUILD DOCUMENTS IN THE Herman OTTÓ MUSEUM The documents housed in the Herman Ottó Museum include a rich and varied matériái on the town's guilds. This study presents the records concerning the butcheries and butchers of Miskolc. The documents allow a glimpse intő the life of the people working in one of most important branches of the food industry of Miskolc and enable a reconstruction of its history. Most of the documents pertaining to the slaughterers and butchers of Miskolc date from the period between the laté 18th century and the mid-19th century. The main sources are primarily the arenda contracts, although they alsó include documents on the guilds in generál. I constructed a timeline for these documents. These sources contain a wealth of data on other aspects of this industry too. One inte­resting point is the appearance of Jewish butchers in the 18th century and the increase in their ranks during the 19th century, as well as the fact that their arenda contracts differed from the generál ones on several counts. The contracts specify the locations of the butcheries and the appearance of new ones can alsó be traced. The documents offer an insight intő the equipment and outbuildings of these butcheries, providing a detailed picture of this activity. The names of the butchers appearing in the contracts enable the reconstruction of individual and family histories. In many cases, a sequence of events can be reconstructed from the available sources, enab­ling more generál conclusions to be drawn. The sources relating to slaughterers and butchers, two related professions, often complement each other and in many cases they alsó elucidate certain points concerning each other, allowing the determination of the similarities and differences between them, as well as the reconstruction of their history before the two mérged.
