Chicken Salad Casserole Have a bang of a July Fourth Celebration with this casserole on your table! Vegetable oil spray* 1A cup fresh bread crumbs 2 Tbsp. acceptable** (V2 slice bread) margarine 1 Tbsp. grated Parmesan V2 lb. fresh mushrooms, cheese sliced V4 cup light, reduced-V2 cup diced green bell calorie mayonnaise pepper 2 tsp. fresh lemon juice V2 cup diced red bell pepper V2 cup chopped onion V2 cup slivered water chestnuts V2 tsp. thyme 1 dash white pepper 2 cups diced cooked chicken Preheat oven to 375° F. Lightly spray an 8 x 8-inch pan with vegetable oil. In a nonstick skillet over medium-high heat, melt margarine. Add mushrooms, bell peppers, onion and water chestnuts. Cover and cook 7 to 9 minutes. Uncover and continue cooking over high heat until juices evaporate. Set aside. In a small bowl, combine bread crumbs and grated Parmesan cheese. Set aside. In a large bowl, combine mayonnaise, lemon juice, thyme and white pepper. Add chicken and vegetable mixture. Stir to mix well. Spoon into prepared pan. Sprinkle bread crumb mixture evenly on top. Bake 20 minutes. Makes 6 servings. ■ Do not use vegetable oil spray near an open flame or a heat source. Read directions on can before using, and follow directions carefully. ** Select margarines that have no more than 2 gm of saturated fat per tablespoon.
