Cherries Jubilee. This dessert is a celebration of taste! 2 cups pitted no-sugar-added 1 Tbsp. cornstarch Bing cherries, canned in 1 Tbsp. grated orange rind natural juices, with juice 2 Tbsp. heated brandy 'h cup currant jelly Drain juice from cherries, reserving juice. In a saucepan, combine cherry juice, currant jelly, cornstarch and orange rind, and cook over low heat until jelly melts. Add cherries and stir to coat well. Cover and simmer 10 minutes. Remove to a heat-proof serving dish. At the table, pour warm brandy over cherries and light. Serve while cherries are still alight. You may also spoon flaming cherries into a Meringue Shell or serve over ice milk. Makes 8 1A-cup servings of cherries. Meringue Shell Vegetable oil spray" 2A cup sugar 3 egg whites 'It tsp. vanilla extract 'It tsp. cream of tartar Preheat oven to 275° F. Lightly spray a 9-inch pie pan with vegetable oil. In a mixing bowl, combine egg whites and cream of tartar. Beat until foamy. Gradually add sugar, beating until stiff, glossy peaks form and sugar is completely dissolved. Add vanilla and beat 1 more minute. Spread meringue in prepared pie pan, building up sides to be thicker than bottom. Bake 1 hour and 15 minutes, or until dry and a light, creamy color. Let meringue cool. Remove carefully from pan. Meringues may be stored in an airtight container until ready for filling. ' Do not use vegetable oil spray near an open flame or a heat source. Yogurt Gelatin Delight Cool off those “dog days” of summer with this treat! 1 3-ounce package fruit- 8 ounces low-fat yogurt flavored gelatin of the same flavor Prepare gelatin according to package directions. Cover and refrigerate just until it begins to set. Add yogurt and stir to combine thoroughly. Pour into molds. Cover and refrigerate until set. Makes 6 servings. Chicken Teriyaki With Vegetables Make Father’s Day truly special with a hearty helping of this delight. 2 Tbsp. light soy sauce 16 fresh mushrooms 5 Tbsp. firmly packed brown sugar 2 medium zucchini, 1 'U Tbsp. acceptable vegetable oil* sliced 1 tsp. ground ginger 16 cherry tomatoes 1A cup sherry 4 medium onions, 1 tsp. hot pepper oil cut into 8 wedges 6 boneless chicken breast each fillets (approximately 16 wooden or metal 4 ounces each), skinned, all visible fat removed skewers Combine first six ingredients in a shallow glass bowl. Rinse chicken and pat dry. Slice lengthwise. Wipe mushrooms with a clean, damp cloth. Place chicken, mushrooms, zucchini, tomatoes and onion in prepared mixture. Stir to coat evenly. Cover and refrigerate approximately 1 hour, turning occasionally. Meanwhile, if using wooden skewers, soak them in water for at least 30 minutes before using. Preheat broiler.
