The laundry employees have to be well trained and intelli­gent and fast, because if they loose speed, laundry does not get done. Laundry in our home requires intelligence, brain, agility and ability. It is not a routine, it is an individual challenge, and only the ones with brain and organizational ability can do it. Our “wizzards” are of these kinds. It is time that we realize that their job is one of the most important in our nursing home, because no other department could function without it. It is high time that residents, families and fellow employees put our thoughts on realistic ground and recognize and applaud the fine laundry services provided and without even having to pay for it. I assure you, the “monsters” do not eat the garments! The most of the time families forget to label the new pieces, and always the nicest ones. Our laundry rods are full with clothing without names and no one claims them. When families bring or send new cloth­ing, (please no wool or things for dry clean ing!) - send them to the attention of someone in the management: the director of nursing; charge nurse; Esther Berkey or myself. We will make sure that the garment gets labeled and gets to your loved one and be written into his/her inventory in their chart. Usually things do not disappear but end up on our rods, or in some other resident’s closet until the next time it is getting back into circulation. Everything worn by the residents should be sanitizable wash and wear. In case of isolation or epidemic, we use very hot water and very strong disinfectant solu­tion, which may discolor clothing. I am sure that no one would ever complain of such precautionary measurements. Our goal is, above everything, the welfare of our residents. We like to see them well­­dressed, neat and clean and well cared for. Our“wizzards”, our wonderful laundry girls, certainly have a great deal to do with our goal-accomplishing. They earn the applause with the respect of each resi­dent, family memberandfellowemployee recognizing their effort to do a good job answering your realistic expectations. THE NEW-OLD TREND Eat the cabbage family to prevent cancer we hear constantly through the radio, television and news­papers, nutritional magazines. The cabbage family: broccoli; brussel sprouts; red cabbage; Chinese cab­bage; cauliflower; white cabbage; savoy cabbage; kohlrabi, etc. They have an unknown property which helps our body fight cancer, according to researchers. Eat a variety of food! This will provide optimal health. Do not be a picky selective person eating only “these" but not “those”. It is never too late to change your food consumption habit if you know it helps you keep your health. Even in your later years you may, and should try new things! Give your tastebuds a chance -- try new food items at least three times to get to know its real taste and familiarize with it, then decide honestly if you really do not like it. Give a chance for new things, new experiences in your life! Have a big variety on your menu. Your health is worth it! FISH — CATFISH If you read the Consumers Report Magazine’s article from a few months ago; “IS OUR FISH FIT TO EAT”, you seriously start to doubt if fish is so healthy for us, since most of them, — even the deep sea fish, -- are contaminated. (We, people succeed wonderfully to ruin our earth!) Fish is one of our best food, we should eat fish three to five times a week, I learned. Well we can have fish and be sure it is not contaminated. Catfish is fast gaining customers’ acceptance. It used to be the looked-down upon mud-tasting garbage collector of the bottom of the rivers and lakes, but nowadays fish hatcheries and catfish farms are mass producing and marketing this fish. The catfish’s head is flat in width and has big wisker­­like barbels around its mouth to tap to find food. Catfish tastes clean, sharpish depending on its prep­aration. Breaded and deepfried, served with lots of lemon, it is delicious. Pan-fried with onion and garlic or grilled with parsleyed butter basting is very tasty. Never, never overcook fish!! Always serve lemon slices or lemon-dill sauce with fish. These enhance their taste. Blackened Panfried Catfish recipe and Stuffed Catfish recipe are available for your convenience in my office. Now I would like to share my Hungarian fisherman Brother-in-law’s recipe with you. He isa bachelorand usually does not cook, but his fish preparations are famous around the Tisza which is the largest river in Hungary. The Catfish Casserole can be prepared in a fancy dish or double aluminum foil as my brother-in­­law does it, in the modern convection oven or on the open fire as they do on the Tisza, just make sure that the dish keeps the juices. Clean and wash the whole catfish or the filet. Salt fish as you like. Sprinkle with red paprika, black pepper, ground red pepper if you like it hot. Slice thin one-two sweet purple onions, four-five dents of garlic. Clean and cut half inch pieces of three sticks of celery, and the same amount of carrots, and at least one cut up green pepper, wash the needed amount of red potato, cut them in quarters, chop parsley to have a generous amount to top with. Place condimented fish on the center of foil or dish, arrange all vegetables on or around the fish, sprinkle lightly with salt, dot with butter or drizzle with good salad oil. Sprinkle a few ounces of good wine on top, close “airtight” and cook until all vegetables are just tender to your liking, about one half hour.
