difficult to provide good, thorough resident care in this amount of time. Just feeding a resident takes a total of 60-90 minutes a day, 20-30 minutes at least three times daily. Where could we find time to bath, dress and groom each resident, distribute their medications, transport them, communicate with them, etc.? According to OBRA (Omnibus Budget Reconciliation Act of the Federal Health Authorities), “each resident must receive, and each family must provide, the necessary care and services to attain or maintain the highest prac­ticable physical, mental and psychological well being” to assure that the resident’s abilities in activities and in daily living do not diminish, unless it is unavoidable because of his/her clinical condition. In this spirit, we follow our goal: to provide the highest level of resident care as it is in our mission statement, to the whole person: “body, mind and soul”. The families of our residents may be a great help in providing quality care for their loved ones in our nursing home. Be honest about your problems, discuss them with the future resident. Tell them your reasons for placement into the nursing home. Our experiences show that, in the long run, it is better to be truthful and honestly confront the situation from the start. It helps the resident to adjust. Instead of the bitterness of frustrated homecare, the family can smother their loved one with sincere attention and love, which can do miracles for both parties. If staff and families could work together in a positive way, under­standing each other and the resident, 1 am sure residents would be more satisfied and happier, and their families less worried. Instead of guilt feelings, they would see that they did the best for the resident, saving their relation­ships and their hearts from frustration. We are inviting the troubled family members to open their hearts when communicating with us. Let us help each other in caregiving. SPICES A long while ago, 1 started to give you information about spices used in our kitchen. The benefit of the spices is not only the aromas and flavors they provide to the food, but they partly substitute the salt. According to the advice of the Surgeon General, salt should be avoided in excess to prevent high blood pressure. The benefits of spices are also that some aid in digestion, eliminate gases, accelerate circulation, add to visual enjoy­ment, color, etc. FACTS ABOUT PAPRIKA Paprika is not only a spice to flavor food, but it also adds a beautiful rich color. Professor Dr. Albert Szent-Gyorgyl revealed that Paprika contains vitamins and other nutrients essential to the body. S/ent-Gyorgyl was awarded the Nobel Prize in 1937 for his discoveries. Paprika contains vitamins C and P as well as B) and B2. Most spices are used by the pinch. Hungarian Paprika should be added by the teaspoonful. Paprika, originally grown in America, made its way to Hungary in the 17th Century. The most famous Paprika growing regions in Hungary are in the vicinity of Szeged and Kalocsa in the Great Hun­garian Plain. GINGER It is a root, knobbish and twisted. The solid skin, which is the outer part, peels away and leaves the smooth root texture. It is available where there is a demand to use it. It stays fresh for three weeks in the refrigerator. In Bangkok (Thai­land), I learned a recipe of Ginger salad which was excep­tionally tasty. Slice the cleaned Ginger root paper thin. Prepare a sweet sour salad dressing with half lemon juice and half vinegar. Pour generously over the paper thin sliced Ginger, let stand for a day, airtight, in the refrigera­tor, stirring now and then. Fresh Ginger is often grated or finely sliced or added diced to stews or compotes for flavor. Ginger is delicious rubbed over duck or fish, like garlic. Powdered Ginger is used for flavoring cookies (use sparing­ly, 1/4 tsp. only) or for cakes. In candied or crystaline form, use it the same way. Ginger tea is helpful for stomach aches, according to Indian belief.
