ÉLIÁS TIBOR: Dobos C. József, a halhatatlan cukrász - A Dobos-torta

E HELYISÉGGEL SZEMBEN ÁLLT DOBOS C.JÓZSEF A Kecskeméti utcában állt emléktábla The commemorative plaque once found at Kecskeméti utca szágból, fűszereket Hollandiából, Angliából, vajat Morvaországból - de mindenekelőtt a minőségi magyar alapanyagoknak adott helyet, s a külföldit inkább csak kiegészítésül, választékbővítésre használta. Pártolta a honi ipart. These goods have not only displaced their foreign counterparts on account of their exquisite quality, but are already being exported in significant quantities to Austria and Bohemia." He also took part in the Millennium Exhibition of 1896 with a similar pavilion, in the meantime, he organised a large number of events: complete lordly dinners, weddings and banquets. He had a plentiful supply of equipment and could set table for as many as 200 guests using silver cutlery, quality porcelain and cut glasses. Dobos was asked to organise the receptions, balls and dinners for the opening of the Csanád county railway, a medical convention, a railway exhibition, and at banquets in Pest and Buda, at the residences of the city elite and at the castles of the aristocracy. We might call these the ancestors of today's catering services. In addition to his diligence and professional prowess, Dobos also owed his reputation to his great integrity. He always said that only a man who was prepared to give up everything in order to devote his life to the art of cookery, and only to that, could become a real gourmet. He loved his profession and spared no expense, ingredients or trouble to produce the foods with which he brought honour and respect to the people of Hungary. He travelled throughout Europe, learning something new everywhere he went, and later made sure that the Dobos Cake reached every large city on the continent. He regularly delivered cakes and desserts abroad before Kugler or Gerbaud had begun to do so. He often sent them as express consignments and thanks to the careful packaging and the special little wooden boxes he used, they arrived at their destination as if they had been made fresh there and then. He later used specially designed cool-boxes and ice-carts to deliver KORA NEVES SZAKÁCS És CUKRÁSZMESTERÉNEK A „О О ВО 5 TORTA" ELSŐ KÉSZÍTŐJÉNEK ÜZLETE 1885. A H í RES .MESTER.
