In the documentation department there are stored essays to serve as sources of further research, supplementary re­minscences, summaries subject-and­topographical indices, bibliographical refe­rence notes. We can also find there our notes, statistical data and compilations refer­ring to exhibitions held in the past. Among them a register listing the catering establish­ments existing in Pest in the past, seems to be of considerable interest. (Imre Gundel) HISTORICAL PHOTOGRAPH COLLECT­ION OF THE CATERING INDUSTRY In our photographic stores there is an original daguerrotype and many original photographs from the past of our trade, postcards, reproductions, newspaper cuttings and numerous slides. We also have many films showing history of cooking, service at table and other interesting films from the life of the museum. (Imre Gundel) LIBRARY OF THE CATERING COLLECT­ION It is noteworthy that our library possesses many valuable cookery books in Hungarian and foreign languages. We also have Hun­garian and foreign handbooks on food and drinks, vocational training, the history of the trade and publications on tourism, the ho­telier's craft, etc. (Dr. Iván Horváth) FINE ART COLLECTION OF THE MU­SEUM The specific character of the museum necessitates the presence of a fine-art collect­ion. Most of them are connected with catering and a smaller portion are of a historical type (from 415 pieces only 12). Some of them don't surpass a historical interest, however there are artistic portraits, pictures, etchings, water-colours, drawings, prints, etc. Side-by-side with some valuable eight­eenth and nineteenth century portraits, there are some notew orthy pictures, draw­ings, that used to decorate the shops. Among the shop-signs, the oldest bears the date of 1728, it is of stone and is called "The Blue Flask", others which have been preserved do not lack a historical or artistic interest either. (Imre Gundel) COIN COLLECTIONS OF THE MUSEUM The history of trade and the catering in­dustry is not devoid of coin collections which were added in great numbers to the material when the museum was established. In this variety of collections we consider those as most important for the research in the history of the trade which are strictly connected with the events in the history of the catering industry, such as emergency coins, memorial coins and plaques. The most important cates are connected with the activities of chambers of commerce which fulfill important functions in the history of commerce. The range of the Hungarian cuisine based on time-honoured traditions is pinpointed by the successes achieved iy Hungarian cooks and chefs at home and 252
