MIKLÓS LAJOS RÓZSA PASTRY COOKS' AND CONFECTIONERS' PRODUCTION AROUND THE END OF THE 18TH CENTURY Part I. Because of the lack of a systematic, comprehensive history of Hungarian pastry cooks we often meet with erroneous hypotheses and conclusions. Archival research by the author over a number of years calls our attention to the necessity of describing the different products and ways of producing them in different historical periods. Useful sources are commercial advertising and inventories attached to bankruptcy or probate papers which describe tools and materials. The article is based on advertising by Friedrich Gräter, a pastry cook, who settled in Pest in 1790, bankruptcy proceedings against him in 1794 and finally on an 1797 invertory for probate purposes of the property. The inventories are in the Suabian dialect, the terminology according to the inventory is given in parentheses notes explaining meanings. The article also gives the number of pastry cooks including biographical data as well available data on potential demand for their products. Only the introductory chapter is here published, informing us what the problems are and describing the methods of the author when dealing with the language problems, Further we get acquainted with the life story of Gräter and his successors and finally with the above mentioned advertisements and inventories. Part two which will be published in the next Almanac deals with the contents of the probate inventory and describes the scope of activities of pastry cooks living in Pest at the end of the 18th century, available data on demand and sales and development examined by the methods of mathematical statis­tics. The article ends with the conslusions reached by the author on the basis of the sources and their elaboration. 153
