Pesah is the feast of spring and the secession from Egypt. In these 8 days the Jews remember the avoidance of the tribulations and the escape from the captivity in Egypt that lasted for over two centuries. The most important relating rule is the prohibition of leavened foods, remembering the Jewish ancestors who, in the rush of escape, had no time to knead their bread and took flat unleavened pastry—matzo— with them. Therefore at Pesah (Passover) every dish is prepared and consumed without leaven but with matzo or matzo flour/ 1 4 1 Hahn 2005.
