SOMHEGYI Ulis study is the partial analysis of animal remains recovered from the site of Szentkirály (Lászlófalva) - Templom dűlÖ in 1971 and 1974. Of the 926 animal bones 890 could be identified. During the course of analysis special attention was paid to the description of phenomena indicative of meat processing and -consumption. The evaluation was aimed at answering the following ques­tions: a) where did the finds originate from? b) which bones have been deformed by animal gnawing or butchering? (Table III) c) what conclusions can be drawn from bones with cutmarks that represent animals of known ages? (Table V) d) what is the relationship between cutmarks and meat quality represented by butchered bones? e) is there a consistency in the frequency of cuts on the same type of bone? f) what is the relationship beUveen the width, depth and direction of cutmarks, butcher­ing tools and quality of muscles associated with bones? (muscle quality is influenced by breed, age as well as methods of keeping and nutrition) On the basis of features at this settlement, domesticates (cattle, sheep, pig and horse) could be best studied in terms of butchering marks (Table III). Butchery trade could be recon­structed on the basis of special cuts (of known location and direction). Marks of hacking and cuts made with knives suggest that meat processing was an organized, specialized activity in the village of Szentkirály, carried out by skilled butchers.
