The subsidiary task of this paper has been to check how much credit can be given to secondary sources at a time when primary ones are as yet rare. At weddings in Hungary there is always a master of ceremonies to co-ordinate the secular elements of the ceremony. At the main meal he would announce each course as it arrived at the table by reciting verses. The paper analyses the sugared food in the early (1790-1914) printed and manuscript chapbooks, which provide texts for such masters of ceremonies. 264
