The subsidiary task of this paper has been to check how much credit can be given to secondary sources at a time when primary ones are as yet rare. At weddings in Hungary there is always a master of ceremonies to co-ordinate the secular elements of the cere­mony. At the main meal he would announce each course as it arrived at the table by re­citing verses. The paper analyses the sugared food in the early (1790-1914) printed and manuscript chapbooks, which provide texts for such masters of ceremonies. 264
