gin. It is a blend of several blue grapes producing red wine. The proportion of blue grapes in the blend is determined. It is fermented on the skin, matured in wooden casks, has a dark purple color, is thick, has got a spine, is tanniny, has a characteristic bouquet and aroma in complete har­mony. Its place of origin is fixed. To produce it one needs to blend at least three different kinds wine made of grapes autho­rized by the vine-growing community. The prominent wi­nes are: Kékfrankos, Kékoportó, Blauburger, Cabernet Franc, Cabernet Sauvignon, Merlot, Pinot Noir, Kadarka.” The greater the number of blue grapes that are used, the richer the bouquet of the Egri Bikavér will be. The pro­portion of the grapes to be blended depends on the cli­matic conditions each individual year, and on the ripe­ness and richness of the color of the grapes.
