It is fermented on the skin, matured in wooden casks, has a dark purple color, is thick, has got a spine, is tanniny, has a characteristic bouquet and aroma in complete harmony. Its place of origin is fixed. To produce it one needs to blend at least three different kinds wine made of grapes authorized by the vine-growing community. The prominent wines are: Kékfrankos, Kékoportó, Blauburger, Cabernet Franc, Cabernet Sauvignon, Merlot, Pinot Noir, Kadarka.” The greater the number of blue grapes that are used, the richer the bouquet of the Egri Bikavér will be. The proportion of the grapes to be blended depends on the climatic conditions each individual year, and on the ripeness and richness of the color of the grapes.
