Our forefathers were resourceful people. They made caves in the soft stone to live in them, to keep animals, or to store wine there. The advantage of these cellars is that wine can be stored in them at temperatures of 10-15 °C, and the temperature is constant all the year round. The fungus living in the cellar and the gases developing during the process of wine maturation together will create a certain mold on the wall, which enhances the aroma of the wine. 10
