Aging Well with Cathy Graham What’s for brinner? IN MY HOUSE, we call it "brinner," a word coined by my daughter when she was very young. Simply stated, brinner is "breakfast for dinner." On a cold winter evening, breakfast for dinner can be a hearty, healthy way to feed the family. With a few minor adjustments, a typical Sunday morning breakfast can quickly satisfy comfort food cravings while adding tons of nutrition. Wild blueberry pancakes, for example, are full of antioxidants and fiber. Serve them with low-fat cottage cheese or plain Greek yogurt for an additional 20 grams of protein. Use whole wheat flour or a mix of white and whole wheat flour for additional nutritional benefits. I am very fond of Kodiak brand pancake mix because it is already packed with protein and meaningful carbohydrates. Fresh fruit is a tasty topping that can replace the heavy sugar of maple syrup and imitation syrups. At 200 calories per four tablespoons, syrups are true nutritional spoilers. Nuts or nut butters are super delicious on hot cakes or waffles adding a crunch and fuller texture. Eggs are versatile and can become a full meal when scrambled with mushrooms, tomatoes, spinach, kale and potatoes. The flavors come alive when cooked together. Add peppers—green or spicy—and top with salsa for a Mexican flare. Grilled banana sandwiches slathered with peanut butter are quick, yummy and stick to the ribs.
