One of the winners in our Just 4 Kidz contest earlier this year wanted us to share more recipes that are healthy and easy for kids to make. Other winners wanted to read more about Hungarian activi­ties. We cover both "healthy" and "Hungarian" in this month's activity: a recipe for cucumber salad, or as the Hungarians call it, uborkasaláta. Yes, you will need a grown-up to help you and to make sure you're doing things safely. Cucumber salad is a part of many Hungarian meals. It is especially delicious and healthy if you are us­ing cucumbers grown in your own garden this summer! Here is a basic recipe for you to try: What You Need • 2 cucumbers • 1 teaspoon salt • 1 teaspoon sugar • Va cup white vinegar • 1/4 tsp garlic powder • Vz cup water What You Do • With the help or supervision of a grown-up, peel the cucumbers. • Slice the cucumbers very thin, using a knife or a mandolin slicer. • Place cucumbers in a large bowl. • Sprinkle salt onto the cucumbers then cover the bowl with plastic wrap. Let stand for 30 minutes to an hour. • Drain the cucumbers in a colander. • In a separate small bowl, combine the sugar, vinegar, garlic powder and water, making what is called a "marinade." • Add this marinade to the cucumbers and let sit (or "marinate") for two to three hours. Depending on your family's taste, this salad can marinate on the counter or in the fridge. • Enjoy with your favorite meal! Not every Hungarian uses the same exact recipe...and that's a good thing! The next time you make it, try adding slices of red onion or a little fresh dill, or top your salad with some paprika or a dollop of sour cream.
