Add the bread cubes and apples and toss evenly, saturating the bread. Refrigerate for 2 hours, turning on occasion so bread becomes totally soaked. Add more cream, if necessary. Pre-heat the oven to 350°F and grease a square baking pan with butter. Scoop the mixture into the baking pan, then sprinkle the remaining 2 tablespoons of sugar over the top of the pudding. Bake in the center of the oven for 50 minutes until the top is crisp and golden and has risen. Remove from oven and cool for 30 minutes before serving.
