Alma Kolbász Quiche Pastry for two 9-inch pies 2 cups Cheddar cheese, shredded 1 pound kolbász, cooked & thinly sliced 2 cups red apples, peeled & sliced I small can mushrooms 4 whole eggs I tablespoon flour I teaspoon salt I cup heavy cream I Vi tablespoons melted butter Put pastry in pie pans, trim and prick bottom and sides. Bake at 400°F for 8 to 10 minutes. Cool on rack. Once pans are cool, layer the cheese, sausage, apples and mushrooms into pie shells. In a mixing bowl, combine other ingredi­ents and beat well. Pour half of quiche mixture in each pie shell. Bake at 375°F for 45 minutes or until set. Let set sev­eral minutes before serving. Hungarian Delmonico Potatoes 3 cups heavy cream 8 ounces white Cheddar cheese Vi teaspoon salt V* teaspoon white pepper Vi teaspoon ground mustard 1 teaspoon paprika 2 lbs Yukon Gold potatoes Vi cup bread crumbs V* stick butter Vi cup flour Using the butter and flour, make a roux. Add the salt, white pepper, mustard, and paprika to the roux. Heat up the heavy cream and thicken with roux. Slice and cook the potatoes to a firm not soft stage. Butter a casserole dish and place a layer of potatoes on the bottom. Sprinkle with a portion of the cheddar, then layer with potatoes. Continue this process until the top layer is potatoes. Pour the sauce over the entire dish, then top with remain­ing cheddar. Preheat the oven to 350°F. Bake the potatoes for 25 minutes or until the top is a golden brown. Remove from oven, let stand five minutes, then serve your guests. Hungarian Apricot Loaf 2 cups sifted flour 2 teaspoons baking powder % teaspoon baking soda 1 teaspoon sweet Hungarian paprika 2 cups dried apricots 1 cup sugar 2 tablespoons softened butter I whole egg ‘A cup water Vi cup fresh orange juice I teaspoon salt 'h cup golden raisins soaked in hot water and drained Soak the apricots covered in warm water for 30 minutes. Drain and cut into strips. Cream the sugar and butter. Add the egg, water and orange juice to the creamed mixture. Sift together the flour, baking powder, soda and salt then add them gradually. Stir in the apricots and raisins. Pour the batter into a well­­greased loaf pan. Bake in a preheated 350°F oven for 75 minutes or until a cake tester comes out clean. Cool and serve to your guests. Hungarian Apple Soup 16 apples, cored & chopped 7 cups water 112 tablespoon lemon peel, grated 1 cinnamon stick (I inch), wrapped in cheese cloth 2 teaspoons sweet smoked paprika V* cup maple syrup I tablespoon arrowroot I tablespoon lemon juice 'A cup white wine Vi cup sour cream Simmer apples, water, lemon peel, cin­namon and maple syrup until apples are tender, about 30 minutes. Remove cin­namon. Puree soup in blender; return to saucepan. Remove about a cup of liquid and combine it with arrowroot. When thickened, return to soup. Stir in lemon juice, and wine. Heat thoroughly, then serve with a spoonful of sour cream in each bowl. Grandma Szuhay’s Apple Cake I cup vegetable oil 3 whole eggs I cup fine sugar 3A cup packed brown sugar 1 teaspoon vanilla extract Vi teaspoon salt 2 cups all-purpose flour 1 teaspoon baking soda 2 teaspoons cinnamon 5 apples peeled, cored & diced I cup chopped walnuts Preheat the oven to 325°F, then grease and flour a 9 x 13 inch cake pan. In a mixing bowl, combine the first five ingredients. Add all the other ingredi­ents except for the apples and walnuts. Batter will be thick so use an electric mixer. Fold in the apples and walnuts, then spread into the pan. Bake for one hour until a toothpick inserted comes out clean. Let cake cool slightly, then serve warm to your guests with pow­dered sugar or whipped cream. In a mixing bowl, combine all the ingredients, then fold in the diced apples. Grease a loaf pan and pour batter into pan.
