It seems that everyone enjoyed the recipes from last month, judging by the amount of letters and emails sent to The HK. There also were some requests for apple recipes published some time ago, so this month we're printing them again, along with a few new ones. First, some light housekeeping. The Hungarian Kitchen website will be going offline for quite some time. The site is a few years old and needs an upgrade. The trend today is web logging with upscale sites that provide more information than just recipes. Avoiding the change has been a priority, as I am a purist who appreciates recipes sans fancy pictures. Nevertheless, conformity is a must, so the site will get a new design, look and style with Chef Vilmos and I writing~oops, I mean blogging--more than once a month. As my responsibilities at Southern New Hampshire University (my full-time job) grow, more recipes and in­formation about culinary and pastry arts will be shared. In the meantime, your patience and support is appreciated. Deb Szuhay, a friend in Ohio, sent three apple recipes that are very easy to prepare for your family or friends. She is a great person and I pray she gets well soon having been under the weather for quite some time. Here is your Trivia Question for the month: Why should you not peel your apples?
