Spoon half the egg whites into the mixture and blend well. Add baking powder to other half of egg whites then add to the mixture. Mix well. Spread batter into the buttered pan. Grease a piece of foil and cover the batter with it. Batter will rise. Bake for one hour not opening oven. Turn oven to 300 degrees and continue baking for 5 more minutes. Turn the oven off and let bread sit in oven another 15 minutes. Let bread cool, slice thin and serve your guests. Rice Souffle (Rizs Felfújt) 2/3 cup rice 3 cups milk 5 eggs separated 6 tablespoons sugar Zi teaspoon lemon rind, grated Zi cup white raisins (optional) 2 tablespoons butter Bread crumbs Cook rice in milk until tender and all liquid is absorbed. Cool. Mix egg yolks, sugar, butter and lemon rind, until creamy. Add to cool rice, mix together. Fold in stiffly beaten egg whites, add raisins. Melt 2 table­spoons butter and line a loaf pan with it. Sprinkle with bread crumbs. Pour mixture into pan and bake at 350 degrees for 60 minutes, until golden brown. Serve with soft custard. Swiss Chard Quiche 12 to 15 leaves Swiss chard, including stalks I large onion, sliced 10 mushrooms, sliced I Zi cups cream, Half & Half or milk, 4 large eggs I teaspoon salt I clove fresh garlic, minced I cup parmesan cheese Butter or margarine Wash Swiss chard and chop coarsely. Place in large pot, and cook until limp. Do not overcook, as baking time is also required. Drain well and cool. In separate Teflon frying pans, using a little butter or margerine, saute onions and mushrooms and allow to cool; Break eggs into a large bowl; scramble with milk or cream. Mix in rest of ingredients, except for the mushrooms. Pour into a buttered, flat casserole and top with mush­rooms.
