The Hungarian Kitchen Zi pound wide egg noodles 1 pound cottage cheese % pound soft butter 2 eggs 'A cup sugar Zi gallon water I tablespoon kosher salt Put water to boil with salt, add noodles and cook until done. Drain water and rinse noodles. In a bowl mash cheese and mix in butter, sugar and eggs. Butter a casserole dish and spread half the noodles in the dish. Spread half of the cheese mixture, then the rest of the noodles and, finally, the rest of the cheese mixture. Gently stir the mixture with a fork to evenly disperse the cheese in the noodles. Bake at 350 degrees for I hour. 3 cups all purpose flour Zi pound cream cheese, softened Zi pound margarine, softened Combine ingredients thoroughly. Pinch off small pieces the size of a small golf ball (you should get about 50). Chill over night in refrigerator. Sprinkle a cutting board or flat surface with powdered sugar and roll out each ball in a 3-inch circle. Fill with thick preserves (any kind, the choice is yours). Roll up and shape into crescents. Bake at 350 degrees for 20 to 25 minutes. Cool down, sprinkle with powdered sugar, serve. 4 ounces cream cheese 4 ounces feta cheese Zi cup unsalted butter 3 tablespoons sour cream I/2 teaspoon anchovy paste (op tional) I teaspoon capers In a mixing bowl blend all the above ingredients thoroughly. Then add the following; 1 tablespoon Dijon mustard Zi tablespoon finely minced onion Zi tablespoon finely minced garlic 2 tablespoons paprika Zi teaspoon caraway seeds Salt and pepper to taste Blend thoroughly and put in a crock or mound on a dish. Chill and serve cold with crackers or a loaf of crusty rye or pumpernickel bread. Zi large onion, chopped I teaspoon butter Zi pound dry cottage cheese I egg yolk I Zi cups sifted all purpose flour I whole egg Salt and pepper to taste I tablespoon water Sauté onion in butter, combine with cottage cheese and egg yolk. Make dough by combining flour, whole egg, salt and water. Roll thin on a floured board. Place a spoonful of the cheese mixture on the dough, allowing three inches between spoonfuls. Using a plastic 12-ounce tumbler, press down on dough making a circle with the cheese in the middle of the circle. Fold over the dough to create a half moon. Press the edges together tightly sealing the half moon. Boil about 9 minutes in salted water or until they float to the top of the water. Remove from water and serve with melted butter drizzled on the top with some sour cream. Pot Cheese for Palacsinta 1 pound dry cottage cheese 2 eggs, separated Zi cup granulated sugar Z4 teaspoon nutmeg I teaspoon vanilla extract Mash cottage cheese finely with a fork. Add egg yolks, sugar, nutmeg and vanilla extract. Blend well and spread on Palacsinta. Warm in oven at 350 for 10 minutes then serve your guests.
