The man asks the cabdriver: “How do I get to Carnegie Hall?” The cabbie answers: "Practice." I think of this story every time someone asks me how they can become a better cook. To become a better cook, or a better musician—or, for that matter, to become better at anything—there’s no substitute for practice. Study is necessary. Increasing your knowledge about a favorite activity will benefit you greatly. However, you may know how a perfect strudel should be made, but that does not mean you can make a perfect strudel. You must take what you know and (here’s that word again) practice. So, get into that kitchen! Pull out the pots and pans, the bowls and utensils. Find a recipe you’d like to try and the ingredients needed to make it. Wash your hands and DO IT! If it doesn’t turn out right the first time, don’t despair. Down the road, DO IT AGAIN! Eventually, you’ll make that perfect strudel or that perfect braciola. Who knows? Maybe someday people will be asking you how they can become better cooks ... or if you would like to write a newspaper column. Practice and study are most important, but always be on the lookout for useful tips. A good tip may not only result in a better dish, but also save you time and effort, reduce mess and odors, and even lessen the risk of injury. So, here are a few tips you may wish to try as you practice your culinary skills. These tips, as well as the "Lenten Special” baked fish recipe that follows, are all taken from “An Outstanding Collection of Treasured Hungarian Recipes and Family Favorites.” Copies are available for a donation of $5 per book to the William Penn Fraternal Association Scholarship Foundation. (See ordering information below.) Cooking Tips • If eggs are placed in cold water before being broken, they will whip easily. The whites will whip more readily if a pinch of salt is added. • Instead of boiling eggs, put in a pan, bring water to boil and turn off flame. When water has cooled, eggs will be hard. • Salt, flour, seasoning, butter and all solids are measured level. • To bake potatoes quickly, boil them in salted water for 10 minutes then put them in the oven. • To cream butter and sugar, warm a pan, put in butter, add sugar, beat with wooden spoon until mixture is like whipped cream. • To prevent cakes from sticking, sprinkle tins with equal parts of flour and fine sugar. • To get more juice out of a lemon, heat in hot water and roll. • Parsley washed in warm water will retain its flavor and chop easily. Baked Fish with Mushrooms (Sült hal gombával) 1 lb. fluke or mackerel 2 egg yolks 1 carrot 1 stalk celery 1 small onion V? lb. mushrooms 'A tsp. salt 'h tsp. vinegar Vi lb. butter W pint sour cream 1 tblsp. grated cheese Clean and wash fish. Boil in pot of water to which vinegar, carrot, celery and onion have been added, for 10 to 15 minutes. Remove fish from water, remove skin from fish, place in buttered casserole. Place mushrooms, which have been browned in butter, around fish. Blend separately in a bowl the egg yolks, sour cream and salt until smooth. Pour over fish sprinkle top with grated cheese. Bake in 350 degree oven for 10 to 15 minutes.
