TO RINSE WOOLENS: For each 2 pounds of blanket, use the juice, of 1 lemon in the rinse water to maintain resiliency and to counteract shrinkage. December 9, 1943 LEMONS ARE VERSATILE Versatile! that’s the lemon. This fruit has many other indis­pensable household uses in addi­tion to its familiar place in re­cipes. In the well-stocked kit­chen, there will always be an ample supply of Sunkist lemons for these various needs. TO SOUR MILK: Sweet milk soured with lemon, may be used eactly like natural sour milk or buttermilk in any baking soda recipe. For a liquid equal to natural sour milk or buttermilk, place 1% tablespoons Sunkist lemon juice in a standard meas­uring cup. Fill to the 1-cüp mark with fresh, sweet milk, or with diluted evaporated milk. The same amount of ' lemon juice may be used in less than 1 cup of milk because with Yz teaspcon of baking soda, it pro­vides as a rule sufficient leavening for 2 cups of flour. In these pro­portions there will be no lemon flavor. For a delicate lemon flavor, increase juice to 2 or 3 tablespoons without increasing baking soda. Lemon juice and baking soda produce baked pro­ducts with a fine grain, a firm moist crumb, and a crisp brown crust. This lemon-soured milk is also a nutritious and healthful drink, tolerated by weak digestions. Mix fresh each time served, varying lemon juice to taste. TO REPLACE VINEGAR: Le­mon juice may replace vinegar in almost any recipe, except in making pickles. TO REMOVE FRUIT, INK OR RUST STAINS: If the material is washable and color fast, rub the spots well with lemon juice, then cover with salt and place in the sun. Repeat process if necessary. TO BLEACH LINEN OR MUS­LIN: Moisten with lemon jujice and spread on the grass in the sun. TO WHITEN COTTON OR LINEN: Boil 5 to 10 minutes in fresh, hot soapy water, adding strained juice of 1 or 2 lemons. Rinse and dry. TO BRIGHTEN COTTON, LINEN OR RAYON: When these fabrics have been grayed or yel­lowed by improper washing and rinsing, add the juice of 1 or 2 FOR GLASS: Restore luster to glass by rubbing with cut lemon or soaking with lemon juice and water. FOR ALMINUM WARE: When aluminum ware becomes dark, fill with water, add a sliced le­mon and boil. FOR COPPER AND BRASS: Cut lemons in halves, dip in salt and rub metal well with them. FOR WOODWORK: Use juice of 1 lemon in 1 quart water as a rinse when cleaning surfaces of painted or enameled wood­work. This will maintain the glossy surface. TO REMOVE LIPSTICK STAINS: Use lemon juice full strength on white wash fabrics— diluted on colored. COSMETIC USES: Immediately after washing dishes, drop a lit­tle lemon juice in the palms and rub well over hands to keep them soft and white. This also removes odors, such as fish or onion. Other cosmetic uses, show­ing the versatility of lemons may be found in the free booklet, “Lemons for Loveliness.” Ad­dress California Fruit Growers Exchange, Sunkist Building, Los Angeles, California.------------v-----------­Victory Menus FOR HOLIDAY FESTIVITIES Glorious Sponge Cake—Treas­ure of Gold the most delicious of all sponge cakes: 6 eggs (at least % cup egg whites and 1/3 cup egg yolks) 1 cup sugar Yt cup cold water 1 tsp. lemon extract 1 tsp. grated lemon rind 1 cup sifted Gold Medal Flour Yz tsp. cream of tartar % tsp. salt For this cake it is important to beat the egg yolks with a ro­tary beater until they are thick and lemon colored (5 min.). Gradually beat in sugar. Beat in part of water, the extract, lemon rind, and the flour, then remain­ing water. Beat egg whites with cream of tartar and salt until they hold a point, then gently fold them into egg yolk mix­ture. Pour into ungreased tube­­center pan. Measure this type pan across top. Size: 5” high in 9” tube-center pan. 33” high in 10” tube­­center pan. Time: Bake 60 to 64 min. Temperature: 325 degree (slow mod. oven). DATE PUDDING Rich and deliciously flavored 2 eggs Yz cup shortening, melted 1 cup brown sugar 1 Yz cups cut-up dates 1 tsp. lemon rind 1 Yz cups sifted Gold Medal Flour Yz tsp. salt 1 tbsp. milk 1 tsp. soda Yz cup chopped nuts Beat eggs well. Stir in sugar mixed with hot shortening. Blend in dates, lemon rind, flour, salt and nuts; then milk with soda dissolved in it. To steam pudding, pour batter into well greased mold (fluted tube center pud­ding mold or round can). For in­dividual molds, use jelly glasses or custard cups. Fill mold 2/3 full; tie waxed paper loosely over top (if using improvised steam­er); place in a steamer (with perforated bottom) which fits tightly over a kettle. Have enough boiling water in kettle to last through steaming, but not high enough to seep into mold Put on the tight cover of steamer. Do not lift until time is up. Then turn pudding from mold. If serv­ing is delayed, keep hot in oven. Eerve hat with hot Foamy Sauce. Size: Fills 7” tube-center mold or 1 quart can or 8 indiv. molds. Time: Steam 1 hr. (1V2 hrs. in qt. can). GOLDEN FRUIT CAKE 1 lb. Sultana raisins 1 lb. figs Yz lb. citron Ys lb. candied cherries Yz lb. candied pineapple Yi lb. candied lemon peel Yi lb. candied orange peel 1 lb. nuts 2 cups shortening (part butter) 3 cups light brown sugar 8 eggs I cup light colored jelly 6 cups sifted Gold Medal Flour 3 tsp. baking powder 1 tsp. salt 2 tsp. cinnamon 1 cup sweet milk 2 tsp. vanilla First prepare fruit and nuts. Slice finely citron, orange and lemon peel; cut up (V*,’’ to Yz"). (If hard, first soften by heating over hot water.) Cut candied cherries, pineapple, dates, .etc. larger. If raisins are very dry, wash and heat them. Heat and cut up nuts coarsely. Line pans with 2 layers of heavy plain paper. An hour or so in advance of making cake, take the short­ening or butter, the eggs and milk out of refrigerator, so they will be at room temperature. Be­fore starting to mix cake, pre­heat oven to temperature indi­cated in recipe. Assemble uten­sils and ingredients and prepare pans. Measure shortening and place in mixing bowl. Measure sugar—leave in measuring cup or place on square of paper. Sift flour—then' measure flour and place in sifter (over a square of paper). Measure baking powder and salt and add to flour in sifter. Meas­ure cinnamon and add to flour in sifter. Measure liquid—leave in measuring cup. Cream the soft shortening, add the sugar gradually, and cream until, the mixture is very fluffy. Beat the eggs until very fluffy and blend into shortening and sugar. Or add eggs one at a time, beating them in well. Stir in the flour, baking powder, salt and cinna­mon (sifted together) alternates with the liquid. Add the nuts, raisins, citron, candied fruit with the last of the flour mixture. Measure flavoring and add with the last addition of the liquid. Beat batter only a few strokes to be sure it is smooth. Pour into prepared pans and bake accord­ing to directions given in recipe. Fill pans almost full. Bake a 2-lb. cake (in loaf pan 8”x4”, 3” deep) 2 hrs. smaller cakes “I wore more clothes than any other girl at the Artists’ and Models’ Mas­querade.” “Is that so? I CHOCOLATE CHIP COOKIES with nuggets of pure, sweet chocolate Yz cup shortening (part butter) 3/8 cup granulated sugar (6 tbsp.) 3/8 cup brown sugar (6 tbsp.) 1 egg 1 1/8 cups sifted Gold Medal Flour % tsp. soda Yz tsp. salt Yz tsp. vanilla Yz cup chopped nuts Yz lb. sweet or semi-sweet chocolate Preheat oven to temperature given in recipe about 15 min. before you want to bake cookies. Assemble ingredients and uten­sils. Prepare baking sheets or pans. Sift flour once, then meas­ure. Put in sifter Measure other dry ingredients except sugar, and put into sifter with flour. Meas­ure shortening and liquid. Meas­ure vanilla and add to liquid. Cream shortening, add sugar gradually and cream together gradually. Beat eggs well, and blend into creamed mixture. Stir in sifted dry ingredients alter­nately with liquid. Cut chocolate in %” pieces. Do not melt it. Add chocolate with nuts. Drop by teasponfuls, piling up dough. Time: Bake 7 to 10 min. Temperature: 400 degrees (mod. hot oven). Amount: About 4Yz doz. (2%” in diam.) “I hear you married dat slick yaller barber las’ week, Mamie.” “Dat I did, Ida. Mo’ dan dat.
