September, 1977 THE EIGHTH TRIBE Page 15 Hungarian Festival Day At Kenny wood Park A Huge Success On August 16th, The Hungarian Ethnic Group of Western Pennsylvania sponsored their sixth annual Hungarian Day Festival. Kitchen Corner:— POTATO LANGOS 3V2 cups all purpose flour 1 package dry yeast IVi cup milk Vi cup sugar Vi cup shortening IV2 tsp. salt 1 egg V2 cup mashed potatoes (no butter or seasonings) Cooking oil for deep fat frying. Cut garlic clove to rub on warm langos. In large bowl of mixer, sift 2 cups of the flour and the yeast. In saucepan, heat milk, sugar, salt and shortening. Stir constantly till shortening melts and the mixture is just warm. Add to dry ingredients in the bowl. Add potatoes and egg. Beat at low speed for IV2 minutes scraping sides of bowl. Then beat 3 minutes at high speed. By hand stir in remaining flour. Mix well. Place in greased bowl. Cover and let rise until double—about 1 hour. Punch down dough. Divide in half. Cover and let rest 10 minutes. They are just one of the couples from the group that performed for the program. This will be Rita’s sixth year and Eugene’s fifth year with the group. In September, we will be accepting new members. We wish to thank everyone who participated in this outing. Those who came out to enjoy the program and food or helped in any way to make it a success. Rose Gerzsenyi, Publicity Chairman On floured surface roll half the dough to about Vi in. thick, about 12 x 10 rectangle. With sharp knife cut in 4 in. circles or ovals. Make 2 parallel slashes about IV2 inches long off center in each circle. Pull slashes apart to widen opening. Fry a few at a time in deep hot fat 375 degrees till puffy and golden brown (about 2 min.) turning once. Drain on paper towel. Serve warm, rubbed with cut garlic cloves. Serve with gulyás or stews. Makes about 12. Extra pieces of dough may be re-rolled. B. Sz.
