A reformkorhoz köthető az olasz eredetű fagylalt fogyasztásának nálunk is elterjedő szokása és választékának bővülése. Fischer többek között titkos összetételű gránátalmafagylaltjáról volt híres. Ugyancsak 1827-ben nyílt a budai Várban a később Ruszwurm cukrászdaként ismert üzlet. Buda legrégibb, máig működő cukrászdája. Alapítója Schwab! Ferenc bécsi születésű cukrászmester volt, majd Richter Leonard vette át az üzlet vezetését, aki lózsef nádor udvari sütőjeként önállósította magát. Ő rendelte meg azt a pompás empire stílusú cseresznyefa berendezést, amelyet ma is láthatunk, ha ellátogatunk a Szentháromság utcába. A két oldalon lévő üvegszekrényekben ma is ott sorakoznak az apró csecsebecsék, bonbonos dobozok, tragantfigurák, antik ihletésű arany-ezüst színű asztaldíszek. Egyik cukrásza Müller Antal városatya volt, az 1867. évi koronázáskor ő rendezte a Fortuna utcában végigvonuló koronázási menetet. Leánya, Róza (a későbbi Ruszwurmné) nyújtotta át Erzsébet királynénak a cukorból és tragantból készült díszmunkát. 1884-től Ruszwurm Vilmos nevét olvashatjuk a cégtáblán. Vevőköréről, készítményeiről így ír Gundel Imre: „Ami a Ruszwurm vendégeit illeti. az előkelőségek, főhercegek, grófok innen vittek cukorkát a királyi család tagjai, a Mátyás templom vagy a budai vár miniatűr képével díszített dobozokban. He ordered the magnificent empire style cherry furnishings that may still be seen today if we visit the shop at Szentháromság utca. The two glass cabinets on each side are still full of small knickknacks, bonbonnières, tragacanth figures and antiquestyle gold and silver coloured table decorations. One of his confectioners was the council member Antal Müller, who organised the coronation parade along For- tuna utca during the coronation of 1867. His daughter Ro'za (later Mrs. Ruszwurm) presented Queen Elisabeth with a decoration made from sugar and tragacanth. The name Vilmos Ruszwurm appears on the shop sign from 1884.
