CSAPÓ KATALIN: Cukrászat a 19. században - Vidéki cukrászdák

Csokoládés pohár, 19-20. század fordulója, MKVM Glass for Chocolate, turn of the 19th century, HMTT ból a két Európa-szerte ismert tortakülönlegesség, a Sacher és a Dobos sem. „Cukros ómama" szerencsére nem élte meg szeretett üzletének államosítását. A szocialista időszakban „Éva cukrászda" névre hallgató üzletben nyoma sem maradt azoknak az ízeknek, illatoknak, amelyek ide vonzották a város egykori polgárait. forgotten today, only fresh ingredients were used for their preparation, pre-made or artificial aromas and flavourings were unknown to them, they used many more eggs and performed several physically difficult jobs by hand that are today done by machines. The specialities of the shop were the iced coffee, the huge "Marienbad mühle (mill) cake", the strawberry pie, the so-called "Saum roll" and the fig slice. And of course the selection would not have been complete without the two cake specialities which were by then already well known throughout Europe, the Sacher cake and the Dobos cake. Perhaps luckily, "Sugared Grandmother" did not live to see her beloved shop be nationalised by the State. In the shop known under socialist times as the "Eva Confectionery", there was no sign of those wonderful flavours and aromas that at one time had attracted the more affluent inhabitants of the city in droves. 53
