appeared that could be rotated over the heat source, while - by the 20 t h century also the huge machines proportioned to industrial quantities made their appearance... Four grades, four shades (or five...) • The variety Arabica is suited - as the only one - for Hamburg type roasting. The coffee beans turn light brown but the colour of their small groove is not changed. The coffee roasted this way can be used, coarsely ground, for filtered coffee preparation. Its infusion of an orange shade and a somewhat sour taste is the so-called "Blümchenkaffee" ('little flower' coffee as the flower pattern of the cup shows through it). • In the course of Vienna type roasting the - still ex­clusively Arabica - coffee beans turn uniformly middle brown. Their decoction is no more translucent, and beside the slightly sour taste a somewhat bitter taste appears. An excellent complement to it is sweet cream or good milk. • When using French roasting, Robusta varieties may be added to the blend. The beans turn dark brown but their surface is still dry and dim. The result lends itself best for preparing "long coffee", although espresso type coffee is also prepared of it. • In the course of Italian roasting the beans are heated to such an extent that on their surface the oil is showing. The coffee beans roasted this way are slick, shining, and nearly black. If ground flourfine, Turkish coffee can be made of them; a somewhat coarser milling product is used in up-to-date high pressure coffee percolators and coffee machines. (The foam-like layer on top of the so-called "cream coffee" does not disappear upon stirring and is due to the oil content of the coffee beans.)
