Noémi Saly: FROM COFFEE "CHERRIES" TO THE "BLACK SOUP"

Coffee substitutes were also used to increase the amount of coffee - or rather the other way round: the flavour of a little coffee considerably enhanced the quality of the substitute. The Hungarian Museum of Trade and Tourism preserve the special coffee roaster of the Debrecen tradesman Ármin Leidenfrost. The device consists of two revolving brass balls. True coffee was put into one of the balls, and was roasted with the aid of the alcohol burner placed under it. Ersatz-coffee was put into the other ball. The two balls were connected with a tube through which - and that was the essence of the invention - the flavour of the roasting coffee flowed to the other ball, and, in the same time, permeated, and improved the quality of the latter. Leidenfrost, of course, did not want to sell chicory for true coffee. He said to his buyers only, and - by this ­he said nothing but the truth: Dear Madame, such an excellent Ersatz-coffee can be purchased in my shop only! May I give you 250 g?
