Goulash festival at Szolnok In 1999 the Szolnok Goulash Festival was founded on private initiative. The festival is out to "cherish and popularise Hungarian rural cookery". Having become staple national food with historical traditions in the Great Plain, the goulash was a dish most locals had something to say about and so decided to participate. The competition rules stipulate that the jury take into consideration traditional methods and serving. "Traditional" in this instance means cooking food over an open fire by men. Categories include Food for men, Old cutlery tableware (painted plates, wooden cutlery, as well as granite plates and alpaca cutlery and folk-art tableware). Many participants donned the traditional folk costumes of the Great Plain, such as baggy trousers, linen shirt, black hat and waistcoat and high boots. Traditional cooking techniques, too, have made a comeback, such as cooking in cauldrons, in clay, on a spit and in clay ovens and irons. 67.
