things were underway, but the successful co-ordination of the contestants and the programme (including the provision of water, shade, etc.) eventually led to a highly successful festival. In the meantime Júlia Béres left Hungary. Zsuzsanna Darabos took over and in recent years the society has been managed by János Császár Bíró. According to the rules of the contest, only ingredients known in Hungary up till 1490 (Matthias' death or the discovery of America) can be used, the dishes have to be cooked in costume and served in an authentic fashion. The teams consist of 3 members. In recent years the rules have changed pursuant to the recommendations of the Hungarian National Association of Gastronomy, and more ambitious cooks are allowed to serve up a Baroque menu. Returning contestants learn a lot by researching for the contest, trying and retrying recipes, taking the challenges and trying to be better each year, unaware of how "infected" they had become by this historical game. Today the people of Nagyszakácsi cherish Renaissance traditions by holding an annual "In search of the Nagyszakácsi royal chefs" cooking contest.
