Food cooked in a cauldron and a clay pot At the end of the 1980s and early 1990s the appearance of western products, commercial chains and fast-food restaurants made a profound influence on both demand and supply, for better and for worse. By way of an answer to globalisation, communities took an interest in local produce. Renaissance means rebirth which in its time in history meant the rediscovery of ancient classical texts and knowledge and reusing them in art and science, associated with the rebirth of European cultural life, today it can be regarded as the rediscovery of our past and reusing its best traditions. Hungary was about to embark on a course of rebirth at the end of the 1980s not only in politics, but also the arts and the culinary scene. Hungary is ken to embrace the European spirit. We boast centuries of culinary tradition which, combined with modern technology, can be used to renew Hungarian cooking, to trigger a renaissance of gastronomy!
