Ideas more and more exquisite, sometimes almost extreme types of recipes were born to astonish consumers and - last, but not least - the rivals in the profession. You can find 19 different ice cream recipes in István Czifray's Hungarian National Cookbook published in 1830 in Pest. Géza Kugler's Latest Cookbook oj Homemade Sweets in Large Scale, published at the beginning of the 1900's already distinguishes among seventy-eight different recipes of ice creams and sherbets. Let us quote a few unusual ice creams: Angelica (spikenerd) ice cream, bisquit (biscuits made from éclair or brioche) ice cream, champagne (champagne mix) ice cream, rosehips ice cream, jrozen May drink, jasmine ice cream, "burning iceberg, "bread ice cream, maraschino (sweet liquor made from maraschino cherries) ice cream, "Monte Crista," "Naples bomb," orange petal ice cream, rose ice cream, clove ice cream, grape ice cream, tea ice cream and butter ice cream. Perhaps the most unusual is earthnut ice cream. (Earthnuts are a rather expensive and rare type of mushrooms.) From the point of view of creativity, today s sweetmeat masters can expressly compete with those of olden times. The professional competitions and the domestic nationwide exhibitions stimulate their fantasies. (In Hungary, for example, you have the competition UKBA - "the year's best ice cream and bowl ice cream.") On such occasions, marvelous and astonishing recipes are born. This is how, for example the dainty called Waldmeister (the Headkeeper) was created, which unifies the flavors of several forest fruits in perfect harmony, or the "vanilla cream bun ice cream," which even has tiny specks of the doughnut body on the top.
