After the expulsion of the Turks, Hungary's reconstruction included the transformation of public catering and lodging for travellers. Roadside inns (Hungarian: csárda), pubs and taverns in the villages, hotels and restaurants in the towns catered for travellers. Soon the first cafés, hotels and cake-shops opened up. The best pubs and inns were usually established around the market square: the nearest to the fair, the better the attendance. 10
