KINDLI Besides fLódni and Haman bag this is the best-known cake at Purim; presumably it became really popular in Hungary at the turn of the 19th-20th c. only. Little is known about its origin; perhaps it was first made in Poland or somewhere east of Hungary. It is filled with raisins or poppyseeds or nuts and by pressing it with the fingers it is formed as a swaddling. Hence its name—kindli is a Yiddish word meaning little baby. The pastry contains wine too, in comformity with the feast that prescribes the drinking of wine. fû z • 2V2 cups flour • a pinch of salt Q LU • 2 teaspoon sugar • 5 tablespoon butter or margarine er CD z • 3 big egg yolks • 7 tablespoon white wine 1% cups nuts 2 teaspoon grated lemon peel Vz teaspoon vanilla essence 2-3 tablespoon water 1 tablespoon butter or margarine • % cup sugar • IV2 teaspoon lemon juice • 1A cup chopped raisins • 2 tablespoon sugar 1 tablespoon honey • 3 tablespoon butter or oil 33
