Mangalica spare rib with pickled onion and cheese „smarni" 20 g Mangalica spare rib 5 g Mangalica fat rosemary salt pepper 10 g shallot 5 ounce garlic 10 g redonion 1 dl bonestock 1egg 2 cup flour 2 dk semolina 1 dl cream 2 cup of cheese 1 tablespoon white wine vinegar Cut the spare rib into thick slices. Fry both sides in a pan, using little cooking fat and then add some salt, pepper and rosemary. In a vacuum bag bake them for 5-6 hours at 67 degrees C. When serving bake them in a hot pan and add some stewed onions (browned in cooking fat, stewed in bone soup, pickled with wine vinegar). Garnish („smarni") Separate egg-white and egg-yolk, combine the latter with flour; grits, little sour cream, salt and pepper Whisk the white of the egg, add it to the other mixture and fry it in a hot pan.
