Bődi Erzsébet: A szatmári svábok sajátosságai a táplálkozáskultúra terén

Erzsébet Bődi Eating Habits Among the Szatmár Swabians Between 1712 and 1838, 31 Swabian settlements came into being in the County of Szatmár in northeastern Hungary. These Swabian communities have maintained their particular cultural character right up to the present day. This paper focuses on some of their traditional dishes. These are Knédli, Snitli, Mihi Suppe (Mehl-Suppe), Brezli, Brotkat, Smóring, Fleis und Kumpera (Fleisch und ...), Broatwurs Suppa (Bratwurst Suppe), Kiche-Suppa, Spectunkata (Speckcäte), Gmiba (Quark), Zieger (Speckgrieben). The author is quite familiar with the fact that Nudli and Strudli are the main Swabian specialities, indeed it is something that has already been stated in the Hungarian literature on the subject. Here the author merely draws attention to the fact that every summer a Strudli Festival is held in both Mérk and Vállalja in Hungary. It is on these occasions that people also arrive from the Swabian villages lying on the Romanian side of the border. The dishes listed above are all eaten by the Swabians on an everyday basis. The author is currently continuing her research into the field of dishes for special occasions. 43
