ABSTRACT WEEKLY REGULARITY IN THE MEALS OF THE SETTLEMENT KISÚJSZÁLLÁS Imre Romsics The relevant ethnographic studies do not entirely fulfil the requirements, intentions, and potentials set by the research of nourishment. Judit Morvay and Mária Kresz's guidelines published in 1973 offer excellent standpoints of collection. Furthermore, the work László Kardos, az Őrség népi táplálkozása ("Traditional Nourishment in the Region of Őrség") (Budapest, 1943) is the closest to the desired principles. Some references can also be found in other works but in their analyses they one-sidedly deal only with types and species of food. In comparison, it is desirable to describe the existing (yearly, weekly, and daily) regularities of nourishment. The quality of nourishment is primarily determined by the culture of the analysed area. Within the culture, the characteristics of farming ought to be thoroughly examined since it is its framework in which the basic raw materials of nourishment are produced. Taking it into consideration, various levels and ways of farming create various customs in nourishment. Achieving a different level of farming implies thj change of nourishment as well. Consequently, it is indispensable to examine the changes within the lives of families. 178
