GÁBOR BENDESI FERENC JURÁNOVICS AND THE HISTORY OF RESTAURANTS AND HOTELS IN SZEGED Present study introduces the life-work of one of the most significant figures in the history of catering in Szeged. Based on contemporaries" recollection, national catering journals, local newspapers, marriage certificates, local and nationwide directories, as well as documents of the Registry Court, the Architecture Council, the Embellishing Committee and the Council of Szeged a more than half a century long history of the city and the trade is revealed. Having a closer look at Juránovics' businesses, such as Hétválasztófejedelem Szálloda (Hotel to the Seven Leaders), Próféta sörcsarnok és vendéglő (Prophet Beer-garden and Restaurant), Hungária Szálló (Hotel Hungária), Európa Szálló (Hotel Europe), as well as Tisza Szálló Részvény Társaság (Hotel Tisza Share Company) the author presents the everyday life of restaurants, inns, and cafeterias in Szeged during the dualistic era. Numerous records and registers, lists of taxpayers, as well as employment statistics and licensing duties provide a subtle picture on how significant role owners of restaurants played in economy during the given period. The study also discusses the changes taking place in the employment structure of catering during the era, and describes common drinking culture. The paper also introduces local safeguarding organizations in catering trade, such as how Szegedi Pincéregylet (The Association of Waiters in Szeged) and Szegedi Szállodások, Kávésok, Vendéglősök és Kocsmárosok Ipartársulata (Trade Association of Restaurant, Cafeteria, Inn and Pub Owners in Szeged) joined the activity of nationwide forums in catering trade with Ferenc Juránovics in the chair. These societies, among others, contributed to the modernization of Hungarian catering, accepted as an independent trade, also aiming at founding schools of professional training, as well as a national pension fund. In order to evoke the figure of Jurinovics together with some of his outstanding colleagues, present paper provides so far unpublished portraits and remarkable family details based on certificates.
