Zsuzsanna Bereznai Feast Dietary Customs in Nemesnádudvar- Summary ­Nemesnádudvar, Hajós and Császártöltés are German-speaking villages in the Kalocsai Sárköz. The people of Nemesnádudvar came from the several lands of the German Empire in the XVIII. century. This lecture is going to present the feast dietary customs of the XX. century in Nemesnádudvar. Several dietary customs belong to the way of human life: christening feast, the wedding and the feast after the interment. They had for the christening dinner meat-soup, paprikas and strudel. The strudel- soup was a typical German meal and it was brought to the woman in child-bed. The traditional wedding dinner was the following in the first half of the XX. century: meat-soup, soup meat with tomato sauce or milk sauce, paprikas, fried meat, millet-pap with fruit, and milk-loaf, doughnut. Christmas and Easter were the most important feasts in the year. There is feast at pig­killing in country households before Christmas, so peasants make provision for their family with meat. There was a day of fasting or fish-day before Christmas, but they had a three-course dinner on the first day of Christmas. On the first day of the year they always ate pig-meat because the pig roots the fortune into the house. The German peasants of Nemesnádudvar killed poultry or lamb for Easter. The finish of the most important works has their feast. When they finish the harvest or the vintage they cook mutton stewed with paprika. When the house was ready for occupation they had a feast with house-warming. The dinner on pig-killing day was one of the most important customs of the year. Its traditional courses are the following: spare-rib soup, soup meat with tomato sauce or horse-radisch, paprikas, fried meat (in our days stuffed cabbage), and strudel, doughnut and milk-loaf at the end. 108
