De így volt mód a század első évtizede Debrecenje vendéglátó cégeinek sokszínűségére, de mondhatjuk azt is, sokszintű- ségére rávilágítani. Hajdú-Bihar Megyei Levéltár Évkönyve XXII In present paper our endeavour was to show the so-called smaller catering units of the catering trade of Debrecen. In the course of it we wrote about the restaurants and tap-houses. We made mention of their places and the method of their work, the expectations (guests, authori­ties) they met, the social composition of their circle of guests. In fact we examined the food and drink service units even smaller than the above (food sellers, sausage sellers, barbecue sellers, grog shops) ac­cording to similar point of view. In further parts of our paper we introduced the work of coffee- taverns by describing their scope of activity, their settlements, their circle of guests and we showed the places where they could be found with their retail shops. At last we mentioned the hosts who gained possibility for work in fact because the question of hotel accommodation accumulated in De­brecen. Since at the beginning of the century the lack of hotel rooms became stable in our town. Nevertheless several problems came about the activity of hosts (crowdedness, level of provision, public morals) and the authorities checked them frequently. 1900 and 1910
