The laws of guilds in the 16 th and 17 th century ordain the makers of masterpieces to place mostly fowl and cow roasts and lesser pork meat on the table. In the 18 th century in the documents regarding food supply of day-labourers and of people of payment in kind of Debrecen besides of mush, lentil, pee and bacon there are mentioned equivalently cheese and curd as well. In that time cheese pressure boards were often present in a lot of "civis" (well-to do peasants') houses. Mutton was popular food mostly in autumn. Lajos Zoltai brings his data mostly from the household of János Szőke lived in the 18 th century. Never­theless the original registers of taxes are abundant sources of other sta­tistics regarding animals and crops. At the end of the 18 th century there were about one thousand taxable pigs in Debrecen but the num­ber of seep was ten or fifteen times higher. In the middle of the 19 th century the rate changed observably to the benefit of pig-breeding. The article finishes by commenting upon the conditions of pig-fattening (till the end of the 19 th century).
