This month, we will revisit a rather popular theme featured in previous December puzzles in which the clues are the ingre­dients that make up traditional Magyar holiday dishes. Among the featured food items in past year’s puzzles were hurka (a Hungarian sausage), kocsonya (pork jelly) and dobos törte (sponge cake layered with chocolate buttercream and topped with caramel) to name a few. As in the past, I will list the ingredients to a savory and hearty main dish and a sweet, delicate dessert. Each compli­ments the other to create a meal of gastronomical excellence. I have prepared each recipe at least once, and, as with most young cooks, I experienced a 50/50 mix of failure and success. The savory recipe features eight ingredients while the sweet side (a favorite of my relatives in Csőt, Hungary) requires 10. A bakery in Pápa, Hungary, makes a simply scrumptuous version which was presented to me by my cousins of the Kiss/Nagy family as a welcoming gesture upon my arrival in 2014. The recipes featured in this puzzle come from two rather old books. The first is Jolié Gabor’s Family Cookbook first published in 1962. She is the mother of the famous Gabor sisters of Hollywood fame. The second source is a 1955 publication from the Chicago Culinary Arts Institute entitled The Hungarian Cookbook. I recently learned that the late, great Hungarian-American chef Louis Szathmary was the driving force behind the creation of this beautifully illustrated 67-page booklet. Next month, I will reveal the names of the two dishes and the pages on which the recipes for each can be found in their respective books.
