Dinner for 4 Borjúpörkölt 2 lbs. lean young veal 2 garlic cloves smashed & chopped 2 tablespoons lard I 'A teaspoons kosher salt I large white onion, minced 2 small very ripe beefsteak tomatoes I tablespoon Hungarian paprika I green pepper, cored & diced small Using a cutting board, cube the veal into I -inch pieces. In a large skillet, melt the lard and fry the onion until it’s golden brown. Remove the skillet from the heat then add the paprika, garlic, salt and veal. Cover the skillet and put back on medium heat. Watch the veal to make sure it does not burn. As the moisture from the meat disappears, add a few tablespoons of spring water to keep the meat hydrated and cooking. Repeat this process for the first 15 minutes of cooking. While the meat is cooking, blanch, peel, seed and dice your tomatoes. Canned tomatoes may be used if fresh are not available. As the meat starts to get soft, add the tomatoes and green pepper. Cook for another 20 minutes and check to make sure you have a little water in the skillet. When the meat is done, most of the liquid will have evaporated, leaving you with a dark sauce that is very tasty with the consistency of a beef stew.
