Make a well in center and add yeast mixture and remaining lukewarm milk. Knead very well. When bowl is left clean, dough is ready. Place dough back in deep bowl or cover with a hot lid and place in warm place to rise double. When it has doubled, place on board and pat dough out until 1 -inch to 11/2-inch thick. Cut dough with 2'A-mch (diameter) wine glass. Roll each round piece of dough in sweet butter. Preheat oven to 350 degrees. Grease deep baking bowl and place buttered balls into pan. Have ready 5 oz. ground walnuts and 5 oz. sugar (mixed). Leave /*­­inch space between balls so that when you are sprinkling walnuts on balls it will go between the balls. Sprinkle raisins if desired. Fill baking bowl until half full. Let rise. Brush with egg yolks and bake for 30 to 35 minutes. When toothpick comes out dry, kalacs is done. Sprinkle with confectionery sugar. Let stand 15 minutes before taking out of pan. Cranberry Freeze 8 ounces cream cheese, softened 3 tablespoons oil & vinegar salad dressing 2 tablespoons sugar Vi cup chopped walnuts I large can whole cranberry sauce I small can crushed pineapple I cup whipped cream or Cool Whip Green leaf of Iceberg lettuce, chopped In a mixing bowl combine the cream cheese, salad dressing and sugar blending very well. Add in the nuts, cranberry sauce and pineapple mixing well. Fold in the whipped cream to make a colorful speckled mixture. Pour into glass or alumi­num loaf tins and freeze overnight. Turkey Casserole Turkey meat sliced into bite-size pieces Turkey gravy Savory stuffing Mashed potatoes Vi cup warm milk V* cup butter, melted Salt & black pepper to taste Pan spray or canola oil Cranberry sauce for garnish Prepare this recipe in a casserole dish or oven pan. Spray or grease the cooking utensil then add the pieces of turkey with stuffing making a mixture. Cover mixture with gravy so casserole stays moist when in oven. Thin the mashed potatoes with warm milk so they spread on top of casserole. With a fork make ridges or any fancy design on top of the whole casserole. Brush with the melted butter. Heat in oven at 350 degrees for 30 minutes or until top turns golden brown. Serve your guests. Chill a bowl of cranberry sauce to be served with casserole. Sweet Potato Souffle Cooked sweet potatoes or yams I Vi cups heavy cream I whole egg V* teaspoon nutmeg V* teaspoon cinnamon % cup brown sugar Salt & pepper to taste I cup chopped pecans or walnuts V* stick margarine In a mixing bowl combine the sweet potatoes or yams with the nutmeg and cinnamon. Mix the egg, brown sugar and heavy cream together then mix into potatoes. Potato mixture should be creamy smooth, not lumpy. Place in a casserole dish greased with the margarine. Bake in a 350-degree oven for 45 minutes or until top is golden. Garnish with chopped nuts and serve your guests. Turkey Salad Dark & white meat turkey cut into 1/2-inch cubes Regular or cranberry mayonnaise Salt & white pepper to taste I stalk celery, minced 1 small red onion, minced In a mixing bowl combine the turkey, celery and red onion. Add the mayonnaise a tablespoon at a time until you reach the desired consistency of moistness. Adjust taste with salt and pepper. Chill for Vi hour. Serve on rye bread with green leaf lettuce or baby spinach for extra flavor and protein. Cranberry Mayonnaise Regular mayonnaise Jellied or whole cranberry sauce Salt & white pepper to taste In a mixing bowl blend 3 table­spoons mayonnaise with I table­spoon cranberry sauce. If you want a sweeter cranberry mayonnaise, add more cranberry sauce. Adjust seasoning to your taste. Chill for Vi hour then serve your guests. TRIVIA ANSWERS: (1) Cranber­ries, concord grapes and blueberries are native to our country. Wild cran­berries were probably served at the first Thanksgiving meal. The first cranberry crop was harvested in Massachusetts in 1816. (2) Elizabeth Lee was the first woman to make Bog Sweet Cranberry sauce.
