Knead very well on floured board until very smooth and elastic. Put under bowl for about 10 minutes to rest. Roll out on lightly floured board until very thin. Let dry for a few minutes. Roll up and cut very fine or in squares with a fancy cutter. Hungarian Gulyas (Gulyás leves) 1 ib. beef chuck 1 tbsp. salt 1 medium onion 2 tbsp. lard or shortening 1 tsp. paprika 3 medium carrots 2 parsley roots 1 qt. water 4 medium potatoes 4 tsp. black pepper Cut beef into 1-inch squares; add IY2 tsp. salt. Chop the onion fine and brown in shortening; add beef and paprika. Let beef simmer in its own juice for 1 hour. Add sliced carrots and chopped parsley roots. Simmer for y2 hour. Add water, diced potatoes and remaining IV2 tsp. salt. Simmer until potatoes are done; add black pepper. Prepare egg dumpling batter: 1 egg J tsp. salt 6 tifsp. flour Add flour to unbeaten egg and salt; mix well. Let stand for Vz hour. Drop by teaspoonfuls into gulyás soup. Simmer 5 minutes after dumplings rise to surface. Serve hot. Cooked Potato Noodles (Angyal bögyörő) 3 or 4 potatoes 2 to 3 cups flour 1 tsp. salt i lb. butter 1 cup bread crumbs 1 cup hot water 2 tbsp. sugar Cook potatoes and mash. Add flour and salt. Mix thoroughly until dough is soft. Break off pieces and roll with palm of hand on floured board. Roll until it forms a rope about 14 inch in diameter. Cut into 1 to 14/2 inch pieces. Drop in boiling water and cook until done — about 10 minutes. Melt butter; add bread crumbs and brown. When crumbs are brown, add about V2 cup hot water and sugar. Cook about 5 minutes until soft. When noodles are done, drain and rinse well with hot water. Sprinkle with salt and add browned bread crumbs. Serve hot. Appetizing, are they not?! How can you wait for all the recipes?
