HUNGARIAN RECIPE OF THE MONTH George Lang’s Beef Dumpling Soup 1 teaspoon salt 2 egg yolks 6 cups beeth broth 1 tablespoon lemon juice 1 tablespoon minced flat parsley 1. Make the dumplings. Bring 4 cups water to a boil with the salt, and cook dumplings over very low heat for 20 to 25 minutes. Stir the water carefully several times. 2. Lift the dumplings from the water with a slotted spoon and place them in a soup tureen. Keep the water at a simmer. 3. Bet the egg yolks, then whip them into the simmering water. Add the beef broth, lemon juice, and parsley. Pour the soup over the dumplings in the tureen. This will give you a “Lőcsei Marhagombocleves’’ of 8 servings. Page 14 Eighth Hungarian Tribe
