September, 1984 HUNGARIAN RECIPE OF THE MONTH POT ROAST ALA ESZTHERHAZY (About 6 Portions) 3 pounds beef round for pot roast 4 slices, bacon, cut into Vi-inch strips Salt 2 tablespoons diced, fresh pork fat 2 medium onions., chopped 2 medium carrots, chopped 2 parsnips, diced 2 celery stalks with leaves, diced 1 bay leaf 10 peppercorns 1 teaspoon thyme 1 pinch freshly grated nutmeg 1 cup rich beef stock 1 cup red wine Vi cup cognac 2 tablespoons all-purpose flour Vi cup whipping cream Grated rind of 1 lemon 1 teaspoon capers Lard the beef with fat parts of bacon (use a larding needle; if you don’t have one, push bacon into meat with knitting needle). Sprinkle the meat with salt. Melt the diced pork fat in a large, heavy bottomed casserole or Dutch oven. Brown beef in hot fat. Remove beef from pot and set aside.
