Dobos, Marcafánk ("Marca doughnut" - a spicy bun with honey and almonds) The cake that Dobos invented is there every day on the counter of every confectionary in Hungary and many foreign ones too. (We were recently informed that a Dobos confectionary had even opened in Taiwan!) His name is uttered by thousands every day, because here at home you don't usually ask for a slice of Do­bos Cake, but simply for a "Dobos". And there is no adult or child in Hungary who has never tasted it. It seems that lózsef С. Dobos had already created one of the world's most well-known "Hungaricums" 125 years ago! Characteristic of his popularity is the fact that on April 12, 1996, the Operetta Theatre in Budapest pre­miered a production by Béla Szakcsi Lakatos and Géza Csemer entitled: Dobostorta. On the occasion of the 125th birthday of the Dobos Cake, we have prepared a mini Dobos Cake according to the original recipe with master confectioner, lános Pataki, with which we wish to pay our respects to the life and work of the Master and further increase his notoriety. A life's work might sometimes seem insignificant, but its social status and regard may still be enormous. Do­bos was correct when he said: "The confectioner's trade is a pure profession ; one can even become famous in it." 94
