PREFACE In the past ten years a large number of indigenous and foreign visitors became acquainted with the precious, fascinating and thought-provoking relics, which are presented in the Hungarian Museum for Commerce and Catering and these remembers accompanied them as an exceptional experience from our Castle mellowed with age. The trade museums, the museums of industrial history have a characteris­tic: on their exhibitions they present not only the development of a definite period of the special field, but —besides their influence deepening the general education —, they are important factors in the forming and developing the professional sense of vocation, in the self-respect of trade and in the rooting into the branch collectivity. This duty is truly completed by our museum. Its functioning, exhibitions, researches, joining in the national and local programmes, raise the cultural refinement of our workers and they are incited by the relics of the past to fulfil the duties and to form the future. The content of the second yearbook has broaded. It already reports also about the work and results of the foundation of the Commercial Collection. In the same time it tries to give a more comprehensive image and to deepen into some special themes. The remembers are touched by it many-sidedly. It draws from the history of the commerce, the relics of the catering industry, the area of the hotels, the gastronomy, tourisme. Also the activity of the workers movement in the catering trade is illustrated by it. It is to be hoped that the Yearbook will exert a many-sidedly favourable effect. I am sure of it, that it will arouse in the special field an international attention and appreciation. It will inflorm and influence the internal public opinion in a favourable direction. It strengthens the sense of cohesion in the specialists and points upon the beauties of their activity. In the young people it augments the respect towards their branch, their predecessors. It is also an effectively applicable instrument in the consulting about the choise of pro­fession. Thanks to the authors and all those who participated in the redaction and publishing of the Yearbook. There is no doubt, that their effort will be successful.
