Place of collection of 3-legged cast iron pans LIDS These articles for personal use were applied for frying be­sides for covering: 83.13.4. is a lid and a spider at the same time. 83.58.69. and 83.58.68. thickening and eggs were being fried or it was used as a lid. 75.39.56. a fish fryer, was applied until the 1920s in open air or else at the chimney-corner seat either to cover or to fry fish and eggs. The collection contains 8 spider lid vessels, 4 from Southern Transdanubia, 3 from Sárköz of Kalocsa and 1 from Hajdúsámson from an antique dealer. (The collection of Sóstó Museum Village con­tains 79.22.1. which spider was a lid too, and 88.1.13. ,,lan­gosh" (fried doughl fryer moreover 69.4.6.2. from Szenna Open Air Museum is also similar to the previous objects.) This type of vessel is peculiar to southern part of the coun­try presumably because of the Danubian shipping route and near manufacture of Bánát (Anina). In accordance with goods catalogues from the beginning of the 20th century the lid was always next to the Bánát saucepan which was a prod­uct from manufacture of Bánát (86.3.170.) and functioned as the spider's cover, very likely because production of this ves­sel type was started in Bánát. 6 6 83.13.5. a spider from Southern Transdanubia is deeply in­teresting, originally it was a legged vessel, but later the legs were cut off and it was also used on hotplate. DOUGHNUT (CZECH) FRYING-PANS (TALKEDLI PANS) The museum collection contains 52 talkedli pans, among them 15 made of earthen, 8 made of cast-iron, some made of tin and most made of enamelled sheet in a manufacture. Tarkedli pans were not widely used, they were applied to fry raised dough cakes in fat or eggs. The greatest number of doughnut frying-pans were found in North-Hungary, in Upper-Tisza Region, in Bakony-Balaton-Uplands, in Pest county and in Kisalföld region. Among the catalogue pre­sented cast-iron pieces 3 comes from North-Hungary, 2 from Hajdúsámson, 1 from Debrecen, 1 from Cegléd, 1 from Milota and 1 from Upper-Tisza Region. In the latter piece (73.34.30.) according to the data of use the pan was bought in the 1970s. Tarkedli pan was an equipment made for frying Czech doughnut and tarkedli. This kind of vessel was spread in peasant households as a result of urban influence. STRUDEL FRYING-PAN From Kisalföld region number 82.1 6.30. pan's local name is Strudel frying-pan. It is a flat-bottomed, round, low-side, outside blue inside white enamelled vessel with two from the rim starting semicircular handles, in fact it is a round baking tin. This Strudel frying-pan was collected by György Balázs in Süttör. According to the informations the seller inherited the pan from her mother who used to make Strudel in it until the 1980s. It's in the Lexicon of Ethnography's 6 5 definition that peasant cuisine's formal cake (round 1900) was baked in a round baking tin wound up spiral. It was usually baked in oven but in the west of Kisalföld always on open fire, sometimes without lid­in the latter case once turned over to brown both sides. In enamelled pan on cooking-stove the previous prepa­ration was frequent also in time of publication the lexi­con. The cast-iron Strudel frying-pan gives an interesting example of preparation way's remain and improvement. Similar low-side, flat-bottomed vessel (79.12.117) from Kisalföld was placed on three iron legs, inside it meat was fried. PANCAKE FRYING-PANS The Hungarian Open Air Museum Szentendre collection contains 37 pancake frying-pans, among them 28 pieces (not registered in the catalogue) were made with manufactured or tinsmith technique, 11 of them was found in northern part of Hungary. Out of 9 cast-iron pancake frying-pans 7 comes from Bakony-Balaton-Uplands, all of them were collected by Györgyi Csukás. This proportion is high, as I know it is not connected with the culture of nutrition. Vessel num­ber 84.80.18. was repaired at the bottom. On 2 pans handle smith trade-mark can be seen. 75.19.5. was used until 1975 when it was collected. Pan 2005.35.1. from Nyíregyháza has turned wood handle. Number 2006.101.19 from Gyöngyös has a scissors shaped mark on the handle. Map 10. Place of collection of pancake frying-pans.
